You could still use the Photoshop Contact Sheets II option under Tools / Photoshop / Contact Sheets II … however, the options are limited and it can't produce a single multi page PDF for you. Older versions of Adobe Bridge had a great feature for creating contact sheets, pdf presentations and web galleries but when Bridge CC shipped, they left out this feature.
